Focaccia Bread 

using Crafty Keto Herb & Garlic bread-mix

 

You can use either your bread-maker or stand mixer to make the dough for this recipe.


1. In your stand mixer bowl, or bread-maker pan, add the sachet of instant yeast, 1 tsp honey (or sugar or inulin - the yeast eats the honey/sugar so don't worry about the carbs!), and 150ml warm filtered water. To ensure that your yeast is active (& not old or bad), allow the mix to sit for a couple of minutes until you see foamy bubbles appear. If you don’t see any bubbles or changes then the water may be too hot or too cold (i.e. it’s killed the yeast), or the yeast could be too old (Crafty Keto bread-mix has yeast included - check the best before date).


2. Once your yeast is foamy and blooming, add your bread-mix, one egg, and 2 & 1/2 tbsp olive oil. If making dough in your bread-maker, set it to the dough setting and knead for approximately 10 minutes. Or in the mixer using the dough hook mix together on a low speed until combined, then knead for approximately 10 minutes. The dough should have formed a ball and look reasonably smooth. If you try to pull a piece off it should stretch not break.


3. Place dough on a lightly oiled bench or silicon mat, use baking paper on top and roll the dough out to form an oval shape, around 2cm thick. Carefully lift and place into a large lined rectangular baking dish if you want more of a rectangular shape, or leave on the silicon mat for an oval shape. Cover loosely with lightly greased plastic wrap and leave to rise for 30-45 minutes or until about doubled in height.


4. Preheat your oven to 170°c before your bread is fully risen. After your bread has almost doubled in size you can poke some dents in it before drizzling with olive oil. You can add any extras at this stage, chunky sea salt, chopped olives, sprigs of rosemary, or any other herbs you like. 


5. Bake for 30-35 minutes,until golden brown. Remove from oven and let cool completely on a wire rack, before slicing.
