Brioche Method

Turn your Crafty Keto White Bread-mix into Brioche!

Baked either in the breadmaker, or the oven. You can use this bread-mix to create anything from cinnamon scrolls to fancy braided challah!


Please note: This Brioche bread is not dairy free or gluten free.

To turn your Crafty Keto White bread-mix into a brioche loaf or buns, all you need to do is make these substitutions:

1. For the Large sized white mix - Reduce your warm water to 180ml instead of 230ml.    (130ml water for regular size mix)
2. Add 40-50gm softened butter instead of oil.    (35gm butter for regular size)

3. Add one whole egg, plus 2 extra yolks.    (1 egg plus 1 yolk for regular size)

4. If you want a sweeter brioche loaf you can add an extra tablespoon or two of erythritol or other sugar free sweetener.

5. If you want to add a little bit of chopped dried fruit or extra sliced almonds, set your bread-maker to the Raisin-beep setting, and add them in at the beep. (The carbs per serve will be slightly higher and macros will be different from below).

6. To bake an oven loaf in a loaf tin set your bread-maker to the dough setting and take it out when finished (it should have completed the first rise). Knead lightly for a few seconds and shape into a loaf. Place into greased tin and leave to rise for 40 - 50 minutes in a warm place, or until almost doubled in size, but don't let it over proof (it will keep rising as it bakes in the oven also). If desired brush top with egg wash (1 egg yolk + 1 tbsp water). Bake at 170°c for about 40-42 minutes, until golden brown.

7. If you want brioche buns, set your bread-maker to the dough setting. Take out, knead again lightly, then cut into 8 pieces. Shape into buns by tucking the edges underneath so you get a smooth top. Place on a greased or parchment lined tray, or silicon mat, press down on buns to flatten slightly, cover in lightly oiled plastic wrap and leave to rise for a further 40 - 45 minutes or until approximately doubled in size. Bake in a preheated oven at 170°c for 30 minutes, until golden brown and firm to touch (still soft but not doughy).

Other tips:
Add the ingredients in the same order as the instructions on the label and then use your usual bread-maker settings, or make dough in the bread-maker or mixer then bake in the oven following these instructions.
You can use inulin instead of honey or sugar, it works just as well.
Let your bread cool before slicing.
