Keto Hot Cross Buns!!

Use your Crafty Keto Spicy Fruit bread-mix to make delicious spicy Hot Cross Buns in time for Easter!

Please note: This recipe can be made dairy free, and has no eggs.

These can be made as a tray of 9 or 12 pull-apart buns.

1. Warm up 240ml unsweetened almond or coconut milk.

2. Add 40gm melted butter (or 40ml oil for a dairy free option) to the milk.

3. In a large bowl, or in your mixer bowl, mix yeast sachet in with the dry ingredients and fruit, and mix together.

4. Pour wet ingredients into the dry ingredients and mix well with a spoon before using your hand, (or using dough hook knead in your mixer until well combined), kneading for a few minutes. It might be sticky to start with but it will come together once the gluten has started binding.

5. On a baking sheet or parchment paper shape dough into a log and cut evenly into  9 (or 12) small pieces.

6. Shape into buns by tucking the edges underneath so you have a smooth top, and place in rows in a baking pan (square for 9 buns - 3x3, or rectangular for 12 buns - 3x4) so they are almost touching. (When they rise they will be touching).
7. Leave to rise for about 40 - 50min, or until the gaps have been filled between buns.

8. Pipe crosses across the tops using a flour & water paste.
I previously tried coconut flour and water but I think it was too heavy for the buns and they sunk a little bit under the crosses, so I'd recommend a mixture of 1tbsp almond flour, 1 tbsp plain flour, and enough water to make a paste you can pipe.
Spoon into a small ziplock bag, cut a small corner off the bag and pipe over buns. Or alternatively you can brush with butter, or egg wash.
9. Bake at 165°c for about 35-38 minutes.
Glaze while still hot using 1/3 cup water with 2tbsp allulose microwaved until bubbling, and brushed over each bun.

If you prefer to ice the buns - Wait until after they're totally cooled down and pipe crosses using keto icing:

1/2 cup powdered erythritol, 1/2 teaspoon vanilla essence, 3 teaspoons water
